The Paella

First cover chicken cubes with flour mixed with your favorite spices.

Cook chicken cubes in 2 tbs broth for 5 minutes.

Mix in onions, garlic, tomatoes, the red peppers, add the rice while stiring so everything gets covered.

Now add the rest of the broth, bring to a boil, add the saffron, mix well and then reduce heat, cover and allow to simmer for 20 minutes.

Place the pieces of fish on top of the rice and chicken mixture. Cover and place in a 350 F oven for 15 minutes . At the very end add a little olive oil.
This is a low-fat version , although there are a multitude of variants:
Add cubed low-fat smoked turkey saussage or / and seafood / King Prawns of your choice. If you don't have saffron use turmeric and your vaforite herbs and spices.
