Black Ginger Cake

You will need a 8 X 8 non-stick baking pan. Pre-heat oven to 350 F. Sift together flour, cinnamon, ground ginger and salt into a mixing bowl. Add crystallized ginger and stir to coat.

In another bowl stir baking soda in to the hot coffee, wisk in molasses, honey, egg white and oil. Now combine this with the dry ingredients stiring only enough to blend. DO NOT OVERMIX OR THE CAKE WILL BE TOUGH. Bake for 30 - 40 minutes or until a cake tester comes out clean. Cool on the rack for 5 minutes then turn out onto a wire rack and allow to cool to lukewarm.

The color of this cake depends both on the type of molasses (Blackstrap makes the darkest cake) and the strength of the coffee. To garnish, coulee fruit puree over cake before serving.

2 cups AP unbleached flour
1/4 cup unpasteurized honey
1 1/2 ts ground cinnamon
1 1/2 ts ground ginger
1/2 ts sea salt
1/4 cup chopped crystallized ginger
1 1/2 ts baking soda
2/3 cup strong hot coffee
1 cup molasses
1 lrg egg white
1 tbs olive oil
